  • Honey should never be stored above 37°C temperatures.
  • Honey damage in terms of taster, flavor and nutritional value and honey should not be heated particularly for long periods.
  • The optimal temperature for the honey storage is from 10-25°C according to the national honey board.
  • When stored in air-tight containers and cool dry places away from direct sunlight, honey can achieve optimum shelf-life when stored for long term.
  • It is suggested to store honey in its original container, but any glass jar or food-grade plastic container will function as well.
  • There is no need to refrigerate/freeze honey as the colder temperature enhances the honey solidification/crystallization which makes it difficult to use.
  • In such cases, honey needs to be heated so that it returns to a liquid state that would harm the sensory as well as nutritional quality of the honey.

Honey Storage in Fridge

  • If you kept honey in the fridge, it will likely to thick and crystallize.
  • However, honey is even crystallized at room temperature. It has a tendency to absorb moisture, which result in crystallization of honey.

Crystallization of honey

  • It is the natural process of glucose sugar molecules aligning into orderly arrangements known as crystals. It is not an indicator of spoilage, impurity, age or quality.
  • If honey is crystallizing, simply put the honey jar in the warm water and stir until all the crystallizes dissolve or place the honey jar near the boiling water or where some heat is available.
