There are no specific standards for cow ghee was prepared mainly based on FSSAI regulation and BIS standard IS 16326:2015. The standard test methods of ghee were used for comparative testing on January 2020.

Moisture
- It generally refers presence of water in product.
- Less amount of moisture is better as it is for longer shelf life.
- The moisture content in the ghee should not be more than 0.5%.
Free Fatty Acid
- Free fatty acids are the percentage by weight of free acid groups in the oil or fat.
- Free fatty acids should be 3% maximum.
Saturated Fat
- Saturated Fat are derived from animal fat as well as vegetable fat.
- It raises LDL cholesterol level. Lower value of LDL is better for health.
Mono Unsaturated Fatty Acid (MUFA)
- The MUFA is referred to as healthy fat.
- They are associated with lowering the level of bad cholesterol and total cholesterol (LDL) whereas increasing production of good cholesterol (HDL)
Poly Unsaturated Fatty Acid (PUFA)
- They are found in plant and animal foods such as salmon, vegetable oils and some nuts. Eating moderate amount of PUFA and MUFA in place of saturated and trans fats can benefit your health.
Trans Fatty Acid
- The trans fatty acids raise the level of bad cholesterol in our blood.
- Lower trans fat is better for health.
Cholesterol
- Lower cholesterol is better for good health. It ghee has high cholesterol, it is not advised.
Baudouin Test
- This test is conducted to know if there is any adulteration ( mix ) of ghee with vanaspati ghee, vegetable oil etc. All the brand passed the test.
Butyro Refractometer Reading
- It is the index of purity of ghee. An highest value of BR means mixture of ghee with vegetable oil or animal fat.
Vitamin A
- Vitamin A is critical for good vision.
Result
- Beta carotene was highest in the Ananda and Amul
- Milk fat was highest in Ananda.
- There is no mixture of animal fat for any brand.
- All the brands passed the minimum requirement
